The Meal I Can’t Stop Making

In a stunning turn of events, I have returned to my tech career. I am just as surprised as you are. My days of being a feral cat roaming the streets, channeling cosmic intelligence on TikTok, and surviving on the spontaneous generosity of the Universe are over…or, changing. Putting it that way makes me want to cry less.
Going from complete freedom to containment has been an adjustment to say the least. But I am genuinely really happy to be back in a seat I once occupied at the company I started my career. What goes around, truly does come back around. With this big of an adjustment, I have invariably had to approach, well…everything, differently. Because, I, have changed. The last few years have been a psycho-spiritual expanse so disorienting that it’s been hard to do reintegrate into ordinary life. These days, I need structures to funnel myself through so I can actually be a functional, contributing member of society. I need practices and anchors to keep me planted in a new way of life.
One of the first stabilizing forces I deployed in my new way of life was meal prepping. If I’m being honest, most food just doesn’t taste good anymore, and until my culinary genius kicks back in again, I need to keep my meals simple, clean, consistent, easy, and worth eating. What originally began as a return to the humble roasted sweet potato turned into a meal that I just cannot. stop. making.
The premise: a on a bed of raw spinach and roasted, seasoned sweet potatoes, add your protein and toppings of choice, microwave, and never eat another meal again.
Kidding, but not. There are 2 variations on this concept that I am loving. No measurements or explicit instructions on purpose-follow your heart.
Mexican Breakfast Bowl (pictured above)
Sweet potatoes - roast (olive oil, salt, garlic powder, onion powder, paprika)
Spinach- (start raw, it gets softened when you microwave)
Black beans - sautée (lime zest, juice, and salt)
Eggs - fried sunny side up
Green onions
Cilantro
Lime
Steak and Goat Cheese Bowl
Sweet potatoes - roast (oilve oil, salt, garlic powder, onion powder, paprika)
Spinach (start raw, it gets softened when you microwave)
Steak slices- sauteed (light coating of cornstartch and suteed)
Goat cheese
Green onions
Parsley
Nothing technical or glamorous here, just the beauty of simple ingredients that together make for easeful, healthy, filing, delicious, reliable meals on the regular. Big batch any of this and it will get you through the week. Let me know if you make this- love you!
